Fine and exclusive Swiss cheeses for quality-conscious lovers of good food

For more than 30 years, Swiss Mâitre Fromager, or master cheesemonger, Rolf Beeler has been tirelessly scouring his homeland, seeking out the best in high quality, mature Swiss cheeses. And his endeavours are increasingly bearing fruit. Switzerland's high-end restaurateurs swear by his products, he makes regular appearances in the local media, and the Confederation's gourmet scene has seen a resurgence in appreciation for traditional Swiss hard cheeses. To satisfy the international demand for his products, in 1998 Rolf Beeler launched his own exclusive range of cheeses, 'SELECTION ROLF BEELER', at the 'Salone del Gusto' international Slow Food festival in Turin. Each cheese is personally selected by Beeler himself and aged to his precise specifications, and the cheeses are sold in Germany, Spain, US and other countries.

For more than 30 years, customers have been queueing up at his market stall in Lucerne, and for almost as long as that he has been supplying cheeses to Switzerland's top restaurants. Restaurant guides such as Gault Millau praise the quality of his products, as do newspapers and magazines: 'Switzerland's Pope of cheese', the tabloids call him, while Switzerland's leading gourmet food journal dubbed him the 'Rambo of the aged cheese'.

Quality is the key!

On a purely commercial level, however, Rolf Beeler is not a major player, and can instead confidently call himself one of Switzerland's smaller cheesemongers. And that is precisely where the key to his quality products lies. He personally selects each individual cheese. Beeler knows many cheese-makers who work only for him, and to his recipes. Pure, natural ingredients are a given, raw milk a requirement. Because cheese made from raw milk is simply better and healthier, a genuine, living gift from the land that changes and improves with age – just like a good wine.
